Culinary Development Chef
Do you want to make your culinary mark on Donna?
We are looking for a highly skilled chef with experience, strong opinions and a genuine passion for Italian food.
You may have worked as a Head Chef or Sous Chef for several years and still love being hands-on with the food – developing dishes, tasting, adjusting and constantly making things better – but would now like to spend more of your time on food and culinary development and less on administration and people management.
At Donna, you will play a central role in the restaurant’s culinary development.
Your role
Together with our Head Chef and culinary team, you will help develop Donna and take the food to the next level.
Your responsibilities will include:
developing new dishes and menus
improving existing dishes
testing ingredients, techniques and recipes
sourcing specialist suppliers and ingredients
ensuring that dishes both taste exceptional and work in a busy restaurant environment
training the kitchen team in new dishes and ensuring consistent quality
following dishes all the way from initial idea and testing through to service and the guest’s plate
contributing to Donna’s long-term culinary direction
For us, development should never happen in isolation from the day-to-day operation. You will therefore also work in the kitchen and take part in service, giving you the opportunity to see how the dishes actually perform during busy evenings.
The role will be approximately 50% culinary development and 50% implementation and hands-on work in the kitchen.
Who are we looking for?
First and foremost, you are a very talented chef.
We imagine that you:
have solid experience from high-quality restaurants
have a strong understanding of Italian cuisine
have experience as a Sous Chef, Head Chef or in another senior kitchen role
keep up with restaurants, ingredients and culinary trends
are able to create something new while also understanding the value of a great classic
can develop dishes that work both financially and operationally
are detail-oriented and keep working on a dish until it is exactly right
can collaborate with an existing kitchen team without needing to be the person who decides everything
The right experience and mindset are more important to us than a specific number of years on your CV.
